The Working Rules
What You Need To Know
- Use room-temperature eggs where possible. Cold fridge eggs can still work, but they are more likely to crack.
- Cook at 130°C to 140°C. High heat can make the shells crack and the whites rubbery.
- Soft boiled: 9–10 minutes, then straight into cold water.
- Jammy yolk: 11–12 minutes, then cold water.
- Hard boiled: 13–15 minutes, then cold water for at least 5 minutes before peeling.
- Timings vary by fryer, egg size and starting temperature. Test two eggs once, write down your machine’s timing, then stop guessing forever.
Pro Tip: Pro move: cold-water shock is non-negotiable. It stops the cooking and makes peeling less of a wrestling match.
