The Working Rules

What You Need To Know

  • Wipe the basket while it is still warm, not blazing hot. Warm grease moves. Cold grease negotiates.
  • Clean after sweet food. Sugar, chocolate and syrup burn on and make the next recipe taste haunted.
  • Check the heating element area for splashes, especially after fatty pork, cheese-heavy trays and glazes.
  • Do not scrape non-stick baskets with metal tools. You are cooking dinner, not mining coal.
  • Use foil trays and liners for messy sauces, but do not rely on them as an excuse to never clean the machine.
Pro Tip: Pro move: a clean fryer gives better flavour, less smoke and more consistent heat. Boring? Yes. Correct? Also yes.
