The Working Rules

What You Need To Know

  • Preheat for 3–5 minutes when chasing crisp. Frozen food needs heat ready to go, not a slow warm-up.
  • Do not overcrowd the basket. Frozen food releases moisture; too much in one drawer turns into steam city.
  • Shake early and shake again. Frozen chips especially need movement so they do not weld into one potato raft.
  • Add seasoning after cooking when possible. Salt too early can pull moisture out and soften the surface.
  • For loaded fries, cook the fries crisp first, then add toppings. Build too early and you make potato soup with ambition.
Pro Tip: Pro move: freezer food usually needs less oil than people think. Crisp comes from airflow and spacing, not emptying half a bottle over frozen chips.
