AIR-FRYER APPLE CIDER DOUGHNUT BITES preparation stage

You’ll Need

For the Dough
250g self-raising flour
50g caster sugar
1 tsp baking powder
1 tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of sea salt
120ml apple cider
40g melted butter
1 egg
1 tsp vanilla extract
Cinnamon Sugar Coating
80g caster sugar
2 tsp ground cinnamon
Maple Butter Glaze
25g melted butter
1 tbsp maple syrup
Optional but Dangerous
Caramel sauce
Vanilla ice cream
Chopped pecans
Whipped cream
Extra cinnamon sugar

Method

Preheat your air fryer to 180°C.

In a large bowl, mix together the flour, caster sugar, baking powder, cinnamon, nutmeg and sea salt.

In a separate bowl, whisk together the apple cider, melted butter, egg and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. Do not overmix.

Roll the dough into 20 walnut-sized balls.

Lightly spray the air fryer basket with oil and arrange the dough balls with space between them.

Air fry for 8–10 minutes, until beautifully golden and cooked through.

Mix together the caster sugar and cinnamon in a bowl.

Stir together the melted butter and maple syrup.

Brush each warm doughnut bite with the maple butter, then immediately roll in the cinnamon sugar until completely coated.

Serve warm while they're still soft in the middle.

Lad Tip: Roll them in the cinnamon sugar while they're still hot. Leave them to cool first and the coating won't stick properly. The warm maple butter acts like edible glue—and gives every bite that proper autumn fairground flavour.
