Air-Fryer Bakewell Cookie Pie

Easy air-fryer bakewell cookie pie with measured UK ingredients, practical timings and full Sweet Munch flavour.

A thick almond cookie pie with a molten cherry-jam middle and toasted flaked almonds. Bakewell tart has swapped its pastry case for something much less restrained.

You’ll Need

100g softened butter
130g plain flour
100g light brown sugar
50g ground almonds
40g caster sugar
1/2 tsp bicarbonate of soda
1 egg
5 tbsp cherry jam
1/2 tsp almond extract
30g flaked almonds
To Finish
Light icing drizzle
Glacé cherries
Optional But Dangerous
Vanilla ice cream
Warm cherry sauce

Method

Preheat the air fryer to 160°C and grease a 16cm round tin.

Beat the butter and sugars, then beat in the egg and almond extract.

Fold in the flour, ground almonds and bicarbonate of soda.

Press two-thirds of the dough into the base and slightly up the sides of the tin.

Spread the cherry jam inside, leaving a clear border.

Flatten pieces of the remaining dough over the jam and scatter with flaked almonds.

Air fry at 160°C for 15-18 minutes until golden at the edge and soft in the centre.

Rest for 15 minutes before finishing and slicing.

Lad Tip: Keep the jam away from the tin edge. Burnt sugar is basically edible superglue with a grudge.
