Air-Fryer BBQ Garlic Bread Rib Melts

This is what happens when somebody looks at a rack of ribs and decides a sandwich isn't enough. Sticky rib meat. Garlic bread.

Air-Fryer BBQ Garlic Bread Rib Melts preparation stage

You’ll Need

1 large garlic baguette or garlic bread loaf
400g cooked BBQ rib meat, shredded
150g grated cheddar
100g grated mozzarella
4 tbsp BBQ sauce
1 small red onion, finely sliced

Rib Seasoning
1 tsp smoked paprika
½ tsp garlic powder
½ tsp black pepper

To Finish
50g crispy onions
2 spring onions, sliced

Optional But Dangerous
Pickles
Jalapeños
Chipotle mayo
Extra rib meat

Method

Preheat your air fryer to 190°C.

Slice the garlic bread in half lengthways.

Toast lightly in the air fryer for 3–4 minutes.

Toss the shredded rib meat with the smoked paprika, garlic powder, and black pepper.

Spread the BBQ sauce across both halves of the garlic bread.

Pile the rib meat generously over the top.

Add the sliced red onion.

Cover with cheddar and mozzarella.

Air fry at 190°C for 5–7 minutes until the cheese is melted, bubbling, and lightly browned.

Finish with crispy onions and spring onions.

Add pickles, jalapeños, or chipotle mayo if using.

Slice into thick portions and serve immediately while still molten.

Lad Tip: Don't cut the rib meat too finely. Big chunky pieces give you proper smokehouse texture. Tiny shredded bits disappear into the cheese and lose half their barbecue swagger.
