You’ll Need

400g halloumi, sliced into thick burger-sized slabs
4 brioche burger buns
1 tbsp olive oil

Smokehouse Seasoning
1 tsp smoked paprika
½ tsp garlic powder
½ tsp black pepper

BBQ Glaze
3 tbsp BBQ sauce
1 tbsp honey
1 tsp Worcestershire sauce

Burger Fillings
4 cheese slices
1 red onion, thinly sliced
50g crispy onions
Lettuce leaves

Optional But Dangerous
Pickles
Jalapeños
Burger sauce
Chipotle mayo

Method

Preheat your air fryer to 200°C.

Pat the halloumi dry with kitchen paper.

Brush lightly with olive oil.

Season with smoked paprika, garlic powder, and black pepper.

Place the halloumi slices into the air fryer basket in a single layer.

Air fry for 8–10 minutes, turning halfway through, until golden and crisp around the edges.

While the halloumi cooks, mix together the BBQ sauce, honey, and Worcestershire sauce.

During the final 2 minutes, brush the halloumi generously with the glaze.

Place a cheese slice on top of each piece and return to the fryer for 1 minute until melted.

Warm the burger buns during the final minute.

Build the burgers with lettuce, glazed halloumi, red onion, crispy onions, and your chosen sauces.

Serve immediately while the halloumi is still hot and slightly squeaky.

Lad Tip: Halloumi waits for nobody. The longer it sits, the firmer it becomes. Get it from fryer to bun as quickly as possible and enjoy it while it's still at peak barbecue glory.
