Air-Fryer BBQ Pulled Beef Loaded Nachos

This is not a starter. It's not a side dish. It's not something sensible people order while pretending they're only a little bit hungry.

Air-Fryer BBQ Pulled Beef Loaded Nachos preparation stage

You’ll Need

500g cooked pulled beef
1 large bag tortilla chips
150g grated cheddar
150g grated mozzarella
1 red onion, finely sliced
4 tbsp BBQ sauce
1 tbsp olive oil

BBQ Beef Seasoning
1 tsp smoked paprika
1 tsp garlic powder
½ tsp black pepper

To Finish
Jalapeños
Spring onions
Sour cream

Optional But Dangerous
Guacamole
Chipotle mayo
Crispy onions
Extra pulled beef

Method

Preheat your air fryer to 190°C.

Add the pulled beef to a bowl with the olive oil, smoked paprika, garlic powder, and black pepper.

Toss thoroughly until evenly coated.

Warm the beef in the air fryer for 5–6 minutes until hot and slightly crisp around the edges.

In a large foil tray, spread out half the tortilla chips.

Scatter over half the beef.

Add half the cheese.

Repeat the layers with the remaining chips, beef, and cheese.

Drizzle generously with BBQ sauce.

Scatter over the sliced red onion.

Air fry at 180°C for 4–6 minutes until the cheese is fully melted and bubbling.

Finish with jalapeños, spring onions, sour cream, guacamole, or whatever dangerous extras you're bringing to the party.

Serve immediately while still molten.

Lad Tip: Loaded nachos should become structurally unstable halfway through eating them. If you can still pick individual chips up neatly after five minutes, you haven't used enough cheese.
