75g dark chocolate
1 tbsp cocoa powder
60g butter
150g full-fat cream cheese
60g caster sugar
35g icing sugar
1 egg
1 egg yolk
45g plain flour
4 tbsp cherry compote
To Finish
Dark chocolate curls
4 fresh or glacé cherries
Optional But Dangerous
Double cream
Chocolate sauce

Method

Preheat the air fryer to 155°C and lightly grease four ramekins.

Melt the dark chocolate and butter together, then stir in the caster sugar.

Beat in the whole egg, then fold through the flour and cocoa.

Divide the brownie batter between the ramekins.

Beat the cream cheese, icing sugar and egg yolk until smooth, then ripple in half the cherry compote.

Spoon the cheesecake mixture over the brownie layer and add the remaining compote in small swirls.

Air fry at 155°C for 13-15 minutes until the edges are set and the centres still tremble slightly.

Cool for 15 minutes, then finish with chocolate curls and a cherry.

Lad Tip: A wobble is good. A wave is raw. A surface with no movement at all means you have baked the joy out of it.
