Sharp blackberries under a soft cobbler crust loaded with white chocolate. The fruit keeps it respectable; the melted chocolate immediately ruins that argument.

You’ll Need

350g blackberries
40g cold butter, cubed
55g caster sugar
35g caster sugar
1 tbsp cornflour
70ml whole milk
1 tsp vanilla extract
75g white chocolate, chopped
120g self-raising flour
To Finish
Icing sugar
Fresh blackberries
Optional But Dangerous
Vanilla ice cream
White chocolate sauce

Method

Preheat the air fryer to 170°C.

Mix the blackberries, sugar, cornflour and vanilla and divide between four ramekins.

Air fry the fruit for 5 minutes.

Rub the butter into the flour, then stir in the sugar and two-thirds of the white chocolate.

Add the milk to make a soft dough.

Drop rough spoonfuls over the bubbling fruit and scatter over the remaining chocolate.

Air fry at 170°C for 10-11 minutes until golden and cooked through.

Rest for 3 minutes and dust with icing sugar.

Lad Tip: Leave gaps in the topping. The blackberry juice needs somewhere to bubble, and those purple edges are the best bits.
