Air Fryer Bloody Mary Oyster Gratin Shells

Bloody Mary seasoning suits oysters: tomato, celery, horseradish, lemon and Worcestershire sauce all sharpen their briny richness. A crisp crumb turns the drink into a hot starter. Crumpled foil holds the half-shells level in the basket. Five fierce minutes cook the oysters and brown the tops without boiling away the liquor.

Air Fryer Bloody Mary Oyster Gratin Shells preparation stage

You’ll Need

For the Oysters
16 fresh oysters in the half shell
3 tbsp tomato ketchup
1 tbsp vodka
1 tsp Worcestershire sauce
1 tsp prepared horseradish
1 tsp lemon juice
1/4 tsp celery salt
Few drops hot pepper sauce

For the Gratin Crumb
60g panko breadcrumbs
25g Parmesan, finely grated
25g butter, melted
1 tbsp finely chopped celery leaves
1/2 tsp black pepper

Optional but dangerous
Extra hot sauce
Lemon wedges
A proper Bloody Mary

Method

Scrub and shuck the oysters, keeping each one in its deeper half shell with its liquor.

Mix the ketchup, vodka, Worcestershire sauce, horseradish, lemon, celery salt and hot sauce.

Spoon a small amount over each oyster.

Mix the panko, Parmesan, butter, celery leaves and black pepper.

Top each oyster with a loose layer of the gratin crumb.

Nestle the shells level in crumpled foil inside the basket.

Preheat your air fryer to 200°C.

Air fry for 4-6 minutes until bubbling, browned and the oyster edges curl.

Rest for 1 minute and serve immediately with lemon.

Lad Tip: Build firm foil nests before adding the oysters. A tilted shell pours its liquor away, leaving you with an expensive breadcrumb on a seaside ashtray.
