You’ll Need

80g softened butter
150g full-fat cream cheese
70g caster sugar
35g icing sugar
1 egg
1 egg yolk
80g self-raising flour
1/2 tsp vanilla extract
2 tbsp whole milk
2 digestive biscuits, crushed
100g blueberries
To Finish
Blueberry compote
Icing sugar
Optional But Dangerous
White chocolate sauce
Vanilla ice cream

Method

Preheat the air fryer to 155°C and grease four ramekins.

Beat the butter and caster sugar, then beat in the whole egg.

Fold in the flour, milk and two-thirds of the blueberries.

Divide the muffin batter between the ramekins.

Beat the cream cheese, icing sugar, egg yolk and vanilla until smooth.

Spoon over the batter and add the remaining blueberries and biscuit crumbs.

Air fry at 155°C for 14-16 minutes until risen and just set.

Cool for 10 minutes and finish with blueberry compote.

Lad Tip: Fresh or frozen blueberries both work. If frozen, use them straight from the freezer or they will dye the entire batter battleship purple.
