The Grand Tour Story
Crossing inland from the Croatian coast, the mountains rise quickly and the roads begin twisting through deep
valleys dotted with stone villages and old Ottoman bridges. Welcome to Bosnia and Herzegovina, where coffee
is taken slowly, hospitality comes naturally, and almost every bakery window is filled with golden coils of fresh
burek.
Our next stop is Sarajevo.
The smell of buttery pastry drifts through the old Baščaršija market while bakers pull tray after tray from
ancient ovens. We meet Emir, whose family has been making burek for generations. He laughs when he sees
the air fryer but shrugs and says, "Good filling is more important than the oven."
After tasting these, nobody disagrees.
You’ll Need
For the Filling
500g beef mince
1 small onion, finely diced
2 cloves garlic, finely grated
1 tsp smoked paprika
1 tsp sweet paprika
1 tsp dried oregano
1 tsp sea salt
½ tsp cracked black pepper
2 tbsp chopped fresh parsley
For the Pastry
6 sheets filo pastry
60g butter, melted
1 tbsp olive oil
To Serve
Greek yoghurt or natural yoghurt
Optional but dangerous
Crumbled feta
Ajvar
Pickled chillies
Cold Bosnian lager
Method
Preheat your air fryer to 190°C.
Heat the olive oil and combine the beef mince, onion, garlic, smoked paprika, sweet paprika, oregano, salt and
black pepper in a foil tray or heatproof dish.
Air fry for 8–10 minutes, stirring halfway, until the beef is browned and any excess moisture has evaporated.
Stir through the chopped parsley and allow the filling to cool slightly.
Lay one sheet of filo pastry onto a clean surface and brush lightly with melted butter.
Add a second sheet on top and brush again.
Spoon a line of beef filling along one long edge.
Roll tightly into a long sausage shape, then coil into a spiral or fold into a neat parcel that fits comfortably
inside your air fryer basket.
Brush generously with the remaining melted butter.
Air fry at 190°C for 10–12 minutes until the pastry is deeply golden, crisp and beautifully flaky.
Allow to rest for 2 minutes before serving with a generous spoonful of yoghurt.
