You’ll Need

1 sheet ready-rolled puff pastry
200g cooked turkey, chopped
150g cooked gammon, chopped
100g stuffing, crumbled
3 tbsp thick gravy
1 tsp black pepper
1 tsp dried thyme
1 egg, beaten

Optional But Dangerous
Brie cubes

Cranberry sauce

Extra gravy for dipping

Method

Preheat your air fryer to 180°C.

Place the turkey, gammon, stuffing, gravy, black pepper, and thyme into a bowl.

Mix thoroughly until evenly combined.

Unroll the puff pastry onto a board.

Cut into 8 equal squares.

Place a generous spoonful of filling into the centre of each square.

If using Brie or cranberry sauce, add a little now.

Brush the pastry edges lightly with beaten egg.

Fold over into parcels and press firmly to seal.

Crimp with a fork if you want extra security.

Brush the tops with the remaining egg.

Place into the air fryer basket with space between them.

Air fry at 180°C for 10–12 minutes until puffed, deeply golden, and beautifully crisp.

Allow to cool for 2 minutes before serving.

Serve warm with extra gravy for dipping.

Lad Tip: The filling should be thick, not sloppy. If it's too wet, the pastry struggles. Think Christmas pie shop, not Christmas soup. The parcels that leak slightly during cooking are usually the first ones people grab.
