Air-Fryer Brown Butter Chocolate Chip Cookie Pie preparation stage

You’ll Need

120g butter
180g plain flour
120g light brown sugar
1/2 tsp bicarbonate of soda
40g caster sugar
Pinch of salt
1 egg
140g mixed milk and dark chocolate chunks
1 tsp vanilla extract
To Finish
Flaky sea salt
Melted chocolate
Optional But Dangerous
Vanilla ice cream
Salted caramel sauce

Method

Melt the butter in a pan until amber and nutty, then cool for 8 minutes.

Preheat the air fryer to 160°C and grease a 16cm round tin.

Whisk the brown butter with both sugars, then beat in the egg and vanilla.

Fold in the flour, bicarbonate of soda and salt.

Stir through most of the chocolate chunks.

Press the dough into the tin and scatter over the remaining chocolate.

Air fry at 160°C for 15-18 minutes until golden at the edge and visibly soft in the centre.

Rest for 10 minutes, finish with sea salt and serve warm.

Lad Tip: Brown butter is worth the extra pan. It makes a normal cookie taste like it has been secretly practising.
