You’ll Need

100g butter
100g self-raising flour
2 ripe but firm pears, peeled and diced
1/2 tsp ground cinnamon
90g light brown sugar
1/4 tsp ground nutmeg
2 eggs
1 tsp vanilla extract
To Finish
Toasted hazelnuts
Icing sugar
Optional But Dangerous
Salted caramel sauce
Vanilla ice cream

Method

Melt the butter in a small pan until golden, nutty and flecked with brown, then cool for 5 minutes.

Preheat the air fryer to 160°C and grease four ramekins.

Whisk the brown butter with the sugar, then beat in the eggs and vanilla.

Fold in the flour, cinnamon and nutmeg.

Stir through three-quarters of the diced pear.

Divide between the ramekins and scatter over the remaining pear.

Air fry at 160°C for 14-17 minutes until risen and just set.

Rest for 4 minutes and finish with hazelnuts and icing sugar.

Lad Tip: Brown butter smells nutty and looks amber. Black butter smells like the smoke alarm is about to get involved.
