Air Fryer Brown Sugar Bacon Wrapped Sausage Bites

AF-200 Crew BBQ Recipe

Air Fryer Brown Sugar Bacon Wrapped Sausage Bites

These are the sort of barbecue snacks that vanish before the main event even starts. Smoky cocktail sausages wrapped in streaky bacon, glazed with brown sugar, maple syrup and BBQ seasoning, then air-fried until the bacon turns crisp and the glaze becomes dark, sticky and beautifully caramelised. One bite turns into five before you even realise what's happened.

Air Fryer Brown Sugar Bacon Wrapped Sausage Bites preparation stage

You’ll Need

For the Sausage Bites
24 cocktail sausages
12 rashers smoked streaky bacon, cut in half
1 tbsp olive oil

Smokehouse Glaze
2 tbsp soft brown sugar
1 tbsp maple syrup
1 tbsp smoky BBQ sauce
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 tsp smoked paprika
½ tsp garlic powder
½ tsp cracked black pepper

To Finish
Fresh chives, finely chopped
Sesame seeds (optional)

Optional but dangerous
Hot honey drizzle
Pickled jalapeños
Ranch dressing
BBQ dipping sauce
Crispy onions

Method

Preheat your air fryer to 195°C.

Wrap each cocktail sausage tightly with half a rasher of streaky bacon and secure with a cocktail stick if needed.

In a bowl, whisk together the brown sugar, maple syrup, BBQ sauce, Dijon mustard, Worcestershire sauce, smoked

paprika, garlic powder and black pepper.

Brush the wrapped sausages lightly with the glaze.

Arrange them in a single layer in the air fryer basket with a little space between each one.

Air fry for 10 minutes, turning halfway through.

Brush generously with the remaining glaze.

Return to the air fryer for a further 4–6 minutes, until the bacon is crisp and the glaze is dark, sticky and bubbling

around the edges.

Rest for 2 minutes before serving.

Finish with chopped chives, sesame seeds or a drizzle of hot honey if using.

Serve immediately with plenty of napkins and your favourite BBQ dipping sauce.

Lad Tip: Don't rush the final glaze. Those last few minutes are where the brown sugar and maple syrup caramelise onto the bacon, creating that proper smokehouse sticky finish that makes people stand around the tray pretending they're "just having one more."
