You’ll Need

600g chicken thighs, cut into large chunks
1 red pepper, cut into chunks
1 yellow pepper, cut into chunks
1 red onion, cut into chunks
1 tbsp olive oil

Cajun Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper
½ tsp cayenne pepper
½ tsp dried oregano

BBQ Glaze
3 tbsp smoky BBQ sauce
1 tbsp honey
1 tsp Worcestershire sauce

Optional But Dangerous
Corn ribs
Potato wedges
Ranch dip
Jalapeños

Method

Preheat your air fryer to 200°C.

Add the chicken to a large bowl.

Pour over the olive oil.

Mix together all the Cajun seasoning ingredients and coat the chicken thoroughly.

Thread the chicken, peppers, and onion onto skewers alternately.

Place the skewers into the air fryer basket in a single layer.

Air fry for 10–12 minutes, turning halfway through.

While they cook, combine the BBQ sauce, honey, and Worcestershire sauce.

During the final 3 minutes, brush the skewers generously with the glaze.

Return to the fryer until the glaze becomes sticky and the vegetables begin charring around the edges.

Remove carefully and allow to rest for 1 minute.

Serve immediately with wedges, corn ribs, or ranch dip.

Lad Tip: Don't cram everything tightly onto the skewers. A little space lets the heat work properly and gives you those dark charred edges that make barbecue food taste like barbecue food.
