Air-Fryer Calabrian 'Nduja Stuffed Chicken Breasts

Easy air-fryer calabrian 'nduja stuffed chicken breasts with measured UK ingredients, practical timings and proper global chicken flavour.

This is not shy chicken. Calabrian 'nduja brings smoky chilli heat, mozzarella brings the molten stretch, and roasted pepper keeps the filling sweet enough to stop the whole thing becoming a dare.

Cutting a proper pocket rather than butterflying the breast keeps the filling trapped inside while the air fryer browns the outside. Slice it at the table and the red, gold and white centre does all the showing off for you.

Air-Fryer Calabrian 'Nduja Stuffed Chicken Breasts preparation stage

You’ll Need

For the Chicken
4 medium chicken breasts
70g 'nduja
100g low-moisture mozzarella, sliced
1 roasted red pepper, patted dry and sliced
1 tsp dried oregano
1 tsp garlic powder
½ tsp sea salt
½ tsp black pepper
1 tbsp olive oil
8 cocktail sticks

For the Crust
50g panko breadcrumbs
25g Parmesan, finely grated
1 tsp smoked paprika
Olive oil spray

To Serve
Lemon-dressed rocket
Roasted baby potatoes

Optional but Dangerous
Hot honey
Extra 'nduja
Garlic mayonnaise

Method

Preheat your air fryer to 190°C.

Cut a deep pocket into the thick side of each chicken breast without slicing all the way through.

Divide the 'nduja, mozzarella and roasted pepper between the pockets.

Close firmly and secure with two cocktail sticks per breast.

Rub with olive oil, oregano, garlic powder, salt and black pepper.

Mix the panko, Parmesan and smoked paprika, then press the mixture over both sides of the chicken.

Lightly spray with oil and place in the basket with space between each breast.

Air fry for 18-21 minutes, turning once, until the crumb is crisp and the filling is piping hot.

Check the chicken, not just the filling, reaches 75°C in its thickest part.

Rest for 4 minutes, remove all cocktail sticks and slice carefully before serving.

Lad Tip: Use low-moisture mozzarella and pat the pepper dry. Wet fillings make a grand escape, drier fillings stay where they belong and give you that clean molten centre.
