Air Fryer Canadian Lobster Poutine Pots

Poutine needs crisp chips, cheese curds and hot gravy in shameless quantities. Lobster turns the Canadian classic into a coastal blowout while keeping the essential squeak and crunch. The chips cook hard and crisp before the gravy, curds and cooked lobster arrive. A very short final blast warms everything without steaming the potatoes to surrender.

Air Fryer Canadian Lobster Poutine Pots preparation stage

You’ll Need

For the Chips
1kg floury potatoes, cut into 1cm chips
1 tbsp vegetable oil
1 tbsp cornflour
1 tsp sea salt

For the Lobster Poutine
400g cooked lobster meat, cut into chunks
250g cheese curds
350ml hot beef or chicken gravy
25g butter, melted
1 tbsp lemon juice
2 tbsp chopped chives
1/2 tsp black pepper

Optional but dangerous
Extra gravy
Pickled chillies
Cold Canadian lager

Method

Soak the cut chips in cold water for 20 minutes, then drain and dry thoroughly.

Toss with the oil, cornflour and salt.

Preheat your air fryer to 200°C.

Air fry for 22-28 minutes, shaking every 7 minutes, until deeply crisp.

Toss the cooked lobster with the melted butter, lemon juice and black pepper.

Divide the chips between four shallow heatproof pots.

Scatter over the cheese curds and lobster and spoon on enough hot gravy to coat, not drown.

Air fry at 190°C for 3-4 minutes until piping hot and the curds soften.

Finish with chives and serve with extra gravy.

Lad Tip: Use hot gravy sparingly before the final cook and serve the rest alongside. Poutine should be gloriously messy, but the chips still deserve a brief memory of crispness.
