You’ll Need

120g finely grated carrot
1/2 tsp mixed spice
90ml vegetable oil
40g chopped walnuts
100g light brown sugar
150g full-fat cream cheese
1 egg
35g icing sugar
120g self-raising flour
1 egg yolk
1 tsp ground cinnamon
1/2 tsp vanilla extract
To Finish
Chopped walnuts
Light dusting of icing sugar
Optional But Dangerous
Caramel sauce
Extra cream-cheese frosting

Method

Preheat the air fryer to 155°C and line a 15cm square tin.

Whisk the carrot, oil, brown sugar and whole egg together.

Fold in the flour, cinnamon, mixed spice and walnuts.

Spread the batter into the prepared tin.

Beat the cream cheese, icing sugar, egg yolk and vanilla until smooth.

Drop spoonfuls over the carrot batter and drag a knife through to make bold swirls.

Air fry at 155°C for 17-20 minutes until risen and just set in the middle.

Cool fully before slicing and finishing with walnuts and icing sugar.

Lad Tip: Finely grated carrot disappears into the sponge. Thick shreds remain as orange shoelaces, and nobody ordered that.
