You’ll Need

100g dark chocolate
25g cocoa powder
90g butter
40g ground almonds
100g caster sugar
4 tbsp cherry jam
2 eggs
1/2 tsp almond extract
65g plain flour
25g flaked almonds
To Finish
6 glacé cherries, halved
Light icing drizzle
Optional But Dangerous
Vanilla ice cream
Warm cherry sauce

Method

Preheat the air fryer to 155°C and line a 15cm square tin.

Melt the chocolate and butter together, then stir in the sugar.

Beat in the eggs and almond extract.

Fold in the flour, cocoa and ground almonds.

Spread half the batter in the tin and dot over the cherry jam.

Cover with the remaining batter and scatter with flaked almonds.

Air fry at 155°C for 16-19 minutes until the top is set but the centre remains slightly soft.

Cool for 20 minutes, then finish with cherries and icing.

Lad Tip: Warm your knife before slicing if you want clean squares. Use it cold if you prefer the authentic eaten-straight-from-the-tin look.
