Air-Fryer Cherry Cola Chocolate Cake Cups

Easy air-fryer cherry cola chocolate cake cups with measured UK ingredients, practical timings and full Sweet Munch flavour.

Dark chocolate cake with cherry-cola sweetness and a soft chocolate centre. It tastes like the drinks fridge and the dessert trolley made a poor but brilliant decision.

Air-Fryer Cherry Cola Chocolate Cake Cups preparation stage

You’ll Need

100g self-raising flour
90ml full-sugar cherry cola
25g cocoa powder
1/2 tsp vanilla extract
90g light brown sugar
60g dark chocolate chunks
1 egg
3 tbsp cherry jam
60ml vegetable oil
To Finish
Cherry glaze
6 glacé cherries
Optional But Dangerous
Chocolate sauce
Vanilla ice cream

Method

Preheat the air fryer to 160°C and line six silicone muffin cups.

Mix the flour, cocoa and brown sugar.

Whisk the egg, oil, cherry cola and vanilla in a separate bowl.

Fold the wet mixture into the dry ingredients until just combined.

Stir through the chocolate chunks and half the cherry jam.

Divide between the cups and dot the remaining jam on top.

Air fry at 160°C for 11-14 minutes until risen and a skewer misses any molten chocolate.

Cool for 5 minutes and finish with glaze and cherries.

Lad Tip: Use full-sugar cola. The sugar helps the texture; diet cola brings sweetener and disappointment to the meeting.
