½ tsp black pepper
150ml chicken stock

2 ripe avocados, mashed with lime
2 tomatoes, thinly sliced
200g sauerkraut, drained
4 tbsp mayonnaise
2 tbsp yellow mustard

Chilli sauce
Extra avocado
A cold Chilean lager
Method
Rub the pork with the oil, paprika, oregano, salt and pepper.
Preheat your air fryer to 195°C.
Place the onion and stock in a snug heatproof dish and sit the pork on top.
Air fry for 15 minutes, then reduce to 170°C and cook for 30-40 minutes.
Remove the joint when the centre reaches 75°C and rest it for 10 minutes.
Slice the pork as thinly as possible and toss it through a little of the hot cooking liquor.
Split the rolls and spread with mayonnaise and mustard.
Pile in the pork, sauerkraut and tomato and air fry open at 180°C for 2 minutes.
Add the mashed avocado, close the rolls and serve before structural failure begins.
