You’ll Need

700g cooked gammon joint, cut into chunky cubes
1 tbsp honey
1 tbsp wholegrain mustard
1 tbsp maple syrup
1 tsp black pepper
½ tsp smoked paprika

Optional But Dangerous
Extra honey

Cranberry sauce
Pigs in blankets on the side

Method

Preheat your air fryer to 200°C.

Place the gammon cubes into a large bowl.

Add the honey, wholegrain mustard, maple syrup, black pepper, and smoked paprika.

Toss thoroughly until every piece is coated.

Place the gammon into the air fryer basket in a single layer.

Air fry at 200°C for 10–12 minutes, shaking halfway through, until the glaze becomes sticky and the edges begin caramelising.

For maximum festive colour, give the gammon a final 2-minute blast at 205°C.

Remove carefully and allow to sit for 1 minute.

Serve immediately while hot, sticky, and gloriously glazed.

Lad Tip: The darker sticky edges are where the flavour lives. If a few pieces look slightly overcommitted around the corners, leave them alone. Those are the bits everybody fights over first.
