Air-Fryer Cranberry Brie Pastry Bites

Every Christmas buffet has that one tray that vanishes first. It's never the healthy option. It's never the salad. It's usually something involving.

You’ll Need

1 sheet ready-rolled puff pastry
150g Brie, cut into small cubes
4 tbsp cranberry sauce
1 egg, beaten
1 tsp dried thyme

Optional But Dangerous
Extra Brie

Extra cranberry sauce
Honey drizzle

Method

Preheat your air fryer to 180°C.

Unroll the puff pastry onto a board.

Cut into 12 equal squares.

Place a cube of Brie into the centre of each square.

Add a small teaspoon of cranberry sauce on top.

Sprinkle lightly with thyme.

Fold the corners of each pastry square towards the centre, pinching lightly to hold the shape.

Brush the pastry with beaten egg.

Place the bites into the air fryer basket, leaving space between them.

Air fry at 180°C for 8–10 minutes until puffed, golden, and beautifully crisp.

Remove carefully and allow them to sit for 1 minute.

Serve warm while the Brie is still gloriously molten.

Lad Tip: Brie becomes volcanic once heated. Give these a minute before attacking them or you'll spend Christmas Day explaining why the roof of your mouth no longer works. The ones that leak a little cheese during cooking are usually the best ones.
