Air-Fryer Croatian Cevapi Loaded Flatbreads

The Grand Tour Story

The Grand Tour leaves Italy behind and hugs the glittering Adriatic coastline until the mountains begin rising

above the sea. Fishing villages become stone towns, red-tiled roofs cling to the cliffs, and smoky charcoal grills

start appearing outside tiny family taverns. This is Croatia, where food is simple, hearty, and built around meat,

bread and people sitting together for hours.

Our first stop is Split.

The harbour's full of fishing boats, the old Roman walls are glowing in the evening sun, and somebody nearby is

grilling cevapčići over charcoal while cold local beer arrives faster than anyone can finish the last one.

They're smoky, juicy little skinless sausages packed into warm flatbread with roasted peppers, red onion and

creamy garlic yoghurt. Proper Balkan comfort food.

Air-Fryer Croatian Cevapi Loaded Flatbreads preparation stage

You’ll Need

For the Cevapi
500g beef mince
250g pork mince
2 cloves garlic, finely grated
1 tsp smoked paprika, 1 tsp sweet paprika, 1 tsp garlic powder, 1 tsp onion powder
1 tsp sea salt, ½ tsp cracked black pepper
1 tsp bicarbonate of soda
1 tbsp sparkling water

To Serve
4 soft flatbreads or pitas
1 small red onion, finely sliced
1 roasted red pepper, sliced
Handful of chopped parsley
Garlic Yoghurt
150g Greek yoghurt
1 garlic clove, finely grated
Juice of ½ lemon
Pinch of salt

Optional but dangerous
Crumbled feta
Ajvar (roasted pepper relish)
Chilli flakes
Cold Croatian lager

Method

Preheat your air fryer to 200°C.

In a large bowl, combine the beef, pork, garlic, smoked paprika, sweet paprika, garlic powder, onion powder, salt,

pepper, bicarbonate of soda and sparkling water.

Mix thoroughly until the meat becomes slightly sticky.

Leave the mixture to rest for 20 minutes if you've got time.

Divide into 16 small sausage shapes, roughly finger length.

Lightly spray the air fryer basket with oil and arrange the cevapčići in a single layer.

Air fry for 10–12 minutes, turning halfway through, until deeply browned with lightly charred edges and cooked

through.

Meanwhile, mix together the Greek yoghurt, garlic, lemon juice and salt.

Warm the flatbreads in the air fryer for the final minute.

Spread each flatbread with the garlic yoghurt, load with the hot cevapčići, roasted peppers, sliced onion and

chopped parsley.

Finish with ajvar, feta or chilli flakes if using, then serve immediately.

Lad Tip: The secret to proper Croatian cevapi isn't fancy seasoning—it's juicy meat and a little char. If they're beautifully browned on the outside but still dripping with juices when you bite into them, you've just started the Grand Tour the Balkan way.
