Air-Fryer Festive Scotch Eggs

If Christmas party food had a heavyweight champion, this would be entering the ring. Sausage meat. Stuffing. Perfectly cooked egg. A crispy festive.

You’ll Need

6 medium eggs
400g sausage meat
100g stuffing mix
75ml hot water
1 tsp dried sage
1 tsp dried thyme
1 tsp black pepper
50g plain flour
2 eggs, beaten
100g breadcrumbs
Oil spray

Optional But Dangerous

Cranberry sauce

Mustard dip
Extra stuffing crumbs

Method

Preheat your air fryer to 190°C.

Boil the eggs for 7 minutes.

Transfer immediately to cold water and peel carefully.

Place the stuffing mix into a bowl.

Add the hot water and leave for 2 minutes.

Mix in the sausage meat, sage, thyme, and black pepper until fully combined.

Divide the mixture into 6 equal portions.

Flatten each portion into a large disc.

Wrap one around each peeled egg, sealing completely.

Roll each Scotch egg in flour.

Dip into the beaten egg.

Coat thoroughly in breadcrumbs.

Lightly spray with oil.

Place into the air fryer basket with space between them.

Air fry at 190°C for 14–16 minutes, turning halfway through, until deeply golden and cooked through.

Allow to cool for 3 minutes before slicing.

Serve warm with cranberry sauce or mustard.

Lad Tip: A festive Scotch egg should feel slightly excessive. That's the whole point. If somebody cuts one open and immediately says "bloody hell," you've probably got the recipe exactly right.
