Air-Fryer Firepit Garlic Butter Steak Bites

This is the sort of barbecue food that makes people hover around the tray pretending they're helping. They're not helping.

You’ll Need

700g sirloin, rump, or ribeye steak
1 tbsp olive oil

Steak Seasoning
1 tsp sea salt
1 tsp cracked black pepper
1 tsp smoked paprika
½ tsp garlic powder

Garlic Butter
50g butter
4 cloves garlic, finely sliced
1 tsp fresh rosemary, finely chopped
1 tsp fresh thyme, finely chopped

Optional But Dangerous
Loaded wedges
Corn ribs
Grilled mushrooms
Cold beer

Method

Preheat your air fryer to 200°C.

Pat the steak dry with kitchen paper.

Cut into large bite-sized chunks.

Toss with the olive oil, salt, black pepper, smoked paprika, and garlic powder.

Place into the air fryer basket in a single layer.

Air fry for 6–8 minutes, shaking halfway through, until browned outside and still juicy inside.

While the steak cooks, melt the butter gently.

Add the sliced garlic, rosemary, and thyme.

Cook for 30–40 seconds until fragrant.

Remove the steak from the fryer and immediately transfer to a large bowl.

Pour over the garlic butter.

Toss thoroughly until every piece is coated.

Serve immediately while still sizzling.

Lad Tip: Steak bites don't need much cooking. The difference between juicy steak and expensive chewing practice is usually about two minutes. If in doubt, pull them out early. You can always give them another blast, but you can't uncook them once they've gone too far.
