You’ll Need

500g Brussels sprouts, trimmed and halved
150g smoked bacon lardons
150ml double cream
75g mature cheddar, grated
50g mozzarella, grated
2 cloves garlic, finely grated
1 tbsp butter
1 tsp black pepper
½ tsp sea salt

Optional But Dangerous

Parmesan topping
Extra bacon
Chilli flakes

Method

Preheat your air fryer to 190°C.

Place the sprouts into a bowl.

Add the butter, salt, and pepper.

Toss thoroughly.

Air fry at 190°C for 8 minutes until beginning to soften and colour.

Meanwhile, place the bacon into a heatproof dish.

Air fry for 4–5 minutes until lightly crisp.

Add the garlic, cream, cheddar, and mozzarella.

Stir thoroughly.

Add the roasted sprouts and mix gently until coated.

Return the dish to the air fryer.

Cook at 180°C for 8–10 minutes until bubbling around the edges and golden on top.

For maximum Christmas glory, give it a final 2-minute blast at 200°C.

Allow to rest for 2 minutes before serving.

Serve alongside turkey, gammon, roast beef, or anything festive that deserves a proper side dish.

Lad Tip: This is the recipe that converts sprout haters. Once sprouts are covered in bacon, garlic, cream, and melted cheese, Christmas diplomacy suddenly becomes much easier.
