Air-Fryer Greek Chicken Spanakopita Parcels

Easy air-fryer greek chicken spanakopita parcels with measured UK ingredients, practical timings and proper global chicken flavour.

Spanakopita normally belongs to spinach and feta, but chicken turns those crisp little parcels into a complete meal. The filling is savoury, lemony and packed tightly enough to stay juicy under the filo.

The air fryer is made for this job: fast heat lifts every buttered layer while the parcel shields the filling. You end up with a proper pastry shatter and no baking tray swimming in oil.

You’ll Need

For the Filling
500g chicken mince
150g baby spinach, roughly chopped
120g feta, crumbled
3 spring onions, finely sliced
1 garlic clove, finely grated
Finely grated zest of 1 lemon
1 tsp dried dill
½ tsp black pepper
1 tbsp olive oil

For the Parcels
8 sheets filo pastry
60g butter, melted
1 tsp sesame seeds

To Serve
Tzatziki
Lemon wedges

Optional but Dangerous
Hot honey
Extra feta
Pickled chillies

Method

Preheat your air fryer to 190°C.

Place the chicken mince, olive oil, spring onions and garlic in a heatproof dish.

Air fry for 8-10 minutes, stirring twice, until the mince is cooked and reaches 75°C.

Stir in the spinach and air fry for 2 minutes, then leave the mixture to cool.

Mix in the feta, lemon zest, dill and black pepper.

Layer two sheets of filo at a time, brushing each lightly with melted butter.

Spoon a quarter of the filling onto each stack, fold in the sides and roll into a tight parcel.

Brush with butter, scatter with sesame seeds and place seam-side down in the basket.

Air fry at 185°C for 8-10 minutes, turning once, until deeply golden and crisp.

Rest for 2 minutes and serve with tzatziki and lemon.

Lad Tip: Cool the filling before it touches the filo. Hot steam makes the pastry limp before cooking begins, a cool, fairly dry filling lets every layer puff and crack.
