Air Fryer Greek Prawn & Courgette Keftedes

Keftedes are Greek fritters that reward plenty of herbs, feta and crisp edges. Prawn brings sweetness to the familiar courgette mixture and makes the centre properly substantial. Squeezed courgette and chopped dry prawns give the patties enough structure for air frying. A hot basket colours both sides without a pan of oil.

Air Fryer Greek Prawn & Courgette Keftedes preparation stage

You’ll Need

For the Keftedes
500g raw peeled prawns, finely chopped
2 medium courgettes, coarsely grated
150g feta, crumbled
3 spring onions, finely sliced
2 tbsp chopped dill
2 tbsp chopped mint
1 egg, beaten
60g plain flour
60g panko breadcrumbs
Zest of 1 lemon
1 tbsp olive oil
1/2 tsp black pepper

For the Yoghurt
200g thick Greek yoghurt
1 tbsp lemon juice
1 tbsp chopped dill

Optional but dangerous
Warm pitta
Extra feta
Pickled chillies

Method

Salt the grated courgette lightly, leave for 10 minutes, then squeeze completely dry.

Mix with the prawns, feta, spring onions, herbs, egg, flour, panko, lemon zest and pepper.

Shape into 12 firm patties and chill for 20 minutes.

Preheat your air fryer to 190°C.

Brush the patties with olive oil and arrange them without touching.

Air fry in batches for 10-12 minutes, turning once.

Check the centres are piping hot and the prawns are opaque.

Mix the yoghurt with the lemon juice and dill.

Rest the keftedes for 2 minutes and serve with the herbed yoghurt.

Lad Tip: Courgette holds more water than seems physically reasonable. Squeeze it hard or the patties will steam, slump and make the feta look guilty by association.
