Air Fryer Hawaiian Spam Musubi Bites

AF-200 Crew Pork Recipe

Air Fryer Hawaiian Spam Musubi Bites

Spam musubi is a Hawaiian convenience-store classic: glazed luncheon meat pressed onto rice and wrapped with nori. It is salty, sticky, compact and far better than its humble tin suggests. The air fryer caramelises the soy-mirin glaze around each slice. Small rice blocks make party-sized bites, with furikake and pickled ginger keeping the pork from owning the entire room.

You’ll Need

For the Glazed Spam
1 x 340g tin Spam, cut into 8 thick slices
2 tbsp light soy sauce
2 tbsp mirin
1 tbsp soft brown sugar
1 tsp sesame oil
For the Musubi
500g cooked sushi rice, cooled until just warm
2 tsp rice vinegar
1 tsp caster sugar
4 nori sheets, cut into 16 strips
2 tsp furikake seasoning
To Finish
Sliced spring onions
Pickled ginger
Optional but dangerous
Sriracha mayonnaise
Extra furikake
A cold lager

Method

Stir the soy sauce, mirin, brown sugar and sesame oil together.

Preheat your air fryer to 195°C.

Brush the Spam slices with glaze and air fry for 7-9 minutes, turning once.

Brush again after turning and cook until the edges are dark and sticky.

Stir the rice vinegar and caster sugar through the warm rice.

Press the rice firmly into 16 small rectangular blocks with damp hands.

Cut each Spam slice in half and place one piece on every rice block.

Wrap each musubi with a nori strip, sealing the end with a dab of water.

Finish with furikake and spring onions and serve with pickled ginger.

Lad Tip: Press the rice firmly enough to travel but not into modelling clay. Damp hands prevent sticking— brute force produces a musubi that could support a garden wall.
