Air Fryer Honey Butter Cornbread Wedges

These are the sort of side dish that quietly steals the barbecue. Golden cornbread with crispy buttery edges, a soft fluffy centre, and a warm honey butter glaze that soaks into every slice. Add a little smoky bacon and a pinch of sea salt and you've got something that sits just as happily beside brisket and ribs as it does with a bowl of pit beans.

You’ll Need

For the Cornbread
250g prepared cornbread mix (or homemade cornbread batter)
60g mature cheddar, grated
4 rashers smoked streaky bacon, cooked until crisp and finely chopped
2 spring onions, finely sliced
1 tsp smoked paprika
½ tsp garlic powder
30g melted butter

Honey Butter Glaze
40g butter, melted
2 tbsp runny honey
½ tsp smoked paprika
Pinch of sea salt

To Finish
Fresh chives, chopped
Freshly cracked black pepper

Optional but dangerous
Hot honey drizzle
Jalapeño slices
Extra crispy bacon
Whipped butter
BBQ pulled pork

Method

Preheat your air fryer to 180°C.

Prepare the cornbread batter according to the packet instructions or your preferred homemade recipe.

Fold in the grated cheddar, crispy bacon, spring onions, smoked paprika, garlic powder and melted butter.

Pour the mixture into a lightly greased round cake tin or shallow baking dish that fits inside your air fryer.

Air fry for 16–18 minutes, until risen, golden and cooked through. A skewer inserted into the centre should

come out clean.

While the cornbread cooks, whisk together the melted butter, honey, smoked paprika and sea salt.

As soon as the cornbread comes out of the fryer, brush the honey butter generously over the top.

Leave to rest for 5 minutes before removing from the tin.

Slice into generous wedges.

Finish with chopped chives, cracked black pepper and any optional toppings.

Serve warm with brisket, ribs, smoked chicken, pulled pork or a bowl of smoky pit beans.

Lad Tip: Brush the honey butter on while the cornbread is still piping hot. It disappears straight into the crumb, giving every wedge that rich sweet-and-smoky finish that makes people forget they came for the meat.
