Air Fryer Irish Dublin Bay Prawn Boxty Bites

AF-200 Crew Seafood Recipe

Air Fryer Irish Dublin Bay Prawn Boxty Bites

Boxty combines grated raw potato with mash for a cake that is crisp outside and soft within. Dublin Bay prawns - really langoustines - add delicate sweetness and proper Irish coastal credentials. The boxty bases cook first, then buttered langoustine tops finish in a few minutes. That sequence gives the potato time to brown without punishing the seafood.

You’ll Need

For the Boxty Bases
350g floury potatoes, coarsely grated
350g cold mashed potato
60g plain flour
1/2 tsp bicarbonate of soda
100ml buttermilk
3 spring onions, finely sliced
1/2 tsp sea salt
1/2 tsp black pepper
1 tbsp vegetable oil

For the Prawn Tops
400g raw peeled langoustine tails
30g butter, melted
1 garlic clove, finely grated
1 tbsp chopped parsley
1 tbsp lemon juice

Optional but dangerous
Soured cream
Extra lemon
Cold Irish stout

Method

Wrap the grated potato in a clean cloth and squeeze it completely dry.

Mix with the mash, flour, bicarbonate, buttermilk, spring onions, salt and pepper.

Shape into 12 small flat cakes and brush with oil.

Preheat your air fryer to 190°C.

Air fry the boxty for 9 minutes, turning once.

Mix the langoustines with the butter, garlic and parsley.

Place two or three langoustines on each boxty and air fry for 4-5 minutes more.

Check the langoustines are opaque and the boxty crisp underneath.

Finish with lemon juice and serve with soured cream.

Lad Tip: Squeeze the raw potato until the cloth feels merely damp. Boxty needs starch, not a private lake, and the mash already brings all the softness required.
