You’ll Need

90g butter, melted
130g plain flour
100g light brown sugar
70g white chocolate chips
1 egg
6 tsp seedless raspberry jam
1 tsp vanilla extract
6 mini jam-filled shortcake biscuits
To Finish
Icing sugar
Extra raspberry jam
Optional But Dangerous
White chocolate sauce
Vanilla ice cream

Method

Preheat the air fryer to 160°C and line six silicone muffin cups.

Whisk the melted butter and brown sugar, then beat in the egg and vanilla.

Fold in the flour and white chocolate chips.

Half-fill the cups with batter and add a teaspoon of jam to each.

Cover with the remaining batter.

Air fry at 160°C for 9 minutes.

Press a mini biscuit into each top and cook for another 3-5 minutes until golden at the edges.

Cool for 10 minutes before removing from the cups.

Lad Tip: Add the biscuit late. Put it on at the start and the air fryer will turn childhood nostalgia into roofing material.
