Air-Fryer Jerk Chicken Drumstick Boxes

Some recipes don't whisper. They kick the front door open. These drumsticks are coated in a bold Jamaican-inspired jerk seasoning packed with warming spices, garlic, thyme and chilli before being roasted until the skin turns beautifully crisp. Served with smoky sweet potato wedges, charred corn and a cooling lime yoghurt dip, this is a proper flavour-packed dinner that earns its place in the regular rotation. Big heat. Big flavour. Big appetite required.

You’ll Need

For the Chicken
8 chicken drumsticks, 1 tbsp olive oil, 2 tsp jerk seasoning, 1 tsp smoked paprika
1 tsp garlic granules, 1 tsp dried thyme
½ tsp ground allspice, 1 tsp sea salt, ½ tsp black pepper, Juice of ½ lime

For the Boxes
2 large sweet potatoes, cut into wedges
1 tbsp olive oil
1 tsp smoked paprika
2 corn on the cob, cut into halves

Salt and black pepper

Lime Yoghurt Dip
150g Greek yoghurt
Juice of 1 lime
1 garlic clove, finely grated
1 tbsp chopped fresh coriander

Pinch of sea salt

Optional but Dangerous

Mango salsa

Sliced red chilli

Pickled onions

Hot pepper sauce

Fresh coriander

Method

Preheat your air fryer to 200°C.

In a large bowl, mix together the olive oil, jerk seasoning, smoked paprika, garlic granules, thyme, allspice, salt, black pepper and lime juice.

Coat the drumsticks thoroughly in the seasoning mixture.

Toss the sweet potato wedges with the olive oil, smoked paprika, salt and pepper.

Place the sweet potato wedges into the air fryer basket and cook for 10 minutes, shaking halfway through.

Add the chicken drumsticks and corn to the basket.

Air fry for 22–25 minutes, turning the drumsticks halfway through, until the chicken is cooked through, the skin is crisp and the sweet potatoes are golden.

Meanwhile, mix together the Greek yoghurt, lime juice, garlic, coriander and salt until smooth.

Divide the sweet potato wedges, corn and jerk drumsticks between four serving boxes or plates.

Serve with the cooling lime yoghurt dip alongside.

Lad Tip: Let the drumsticks rest for 3–4 minutes before digging in. It keeps the meat beautifully juicy, and the jerk seasoning settles into the skin, giving you a much deeper flavour in every bite.
