Air-Fryer Leftover Bolognese Mozzarella Wrap

This is one of the easiest ways to make yesterday's Bolognese feel like a completely different meal. Rich beef sauce, melted mozzarella and a crisp golden tortilla come together into a wrap that's somewhere between a burrito, a toastie and a calzone. Quick, satisfying and made for one person with absolutely nothing wasted.

Air-Fryer Leftover Bolognese Mozzarella Wrap preparation stage

You’ll Need

Main
1 large tortilla wrap
150g leftover Bolognese
50g mozzarella, grated
10g Parmesan, grated
1 tsp chopped fresh parsley

Optional but Dangerous
Chilli flakes
Jalapeños
Garlic butter
Garlic mayo
Extra mozzarella

Method

Preheat your air fryer to 190°C.

Warm the leftover Bolognese in a small heatproof dish for 3–4 minutes, stirring once, until piping hot.

Lay the tortilla wrap flat on a board.

Spoon the Bolognese down the centre of the wrap, leaving a border around the edges.

Scatter over the mozzarella and Parmesan.

Fold in both sides, then roll the wrap tightly into a sealed parcel.

Lightly spray or brush the outside with a little olive oil.

Place the wrap seam-side down into the air fryer basket.

Air fry for 6–8 minutes, carefully turning halfway through, until crisp, golden and the cheese has fully melted inside.

Leave to rest for 1 minute, slice in half and finish with chopped parsley before serving.

Lad Tip: A tightly rolled wrap is the secret here. If you don't overfill it, the cheese stays inside, the tortilla crisps beautifully, and yesterday's Bolognese suddenly feels like a completely different dinner.
