Air-Fryer Leftover Mash Potato Cakes

This is exactly the sort of recipe Home Alone was made for. Instead of reheating yesterday's mashed potato, turn it into crisp golden potato cakes with a soft fluffy middle. Topped with a fried egg and a little grated cheese, it feels like a completely new meal instead of yesterday's leftovers.

Air-Fryer Leftover Mash Potato Cakes preparation stage

You’ll Need

Main
200g leftover mashed potato
20g mature cheddar, grated
1 spring onion, finely sliced
1 tbsp plain flour
1 small egg (divided)
½ tsp garlic powder
Salt and black pepper
Light spray of olive oil
To Serve
1 fried egg

Optional but Dangerous
Crispy bacon
Brown sauce
Chilli sauce
Baked beans
Extra grated cheese

Method

Preheat your air fryer to 200°C.

In a bowl, combine the leftover mashed potato, grated cheddar, spring onion, flour, half the beaten egg, garlic powder, salt and black pepper.

Mix until the mixture holds together comfortably.

Shape into 2–3 thick potato cakes.

Lightly spray the air fryer basket with oil and place the potato cakes inside.

Spray the tops lightly with oil.

Air fry for 10 minutes, carefully turning halfway through, until both sides are crisp and golden.

While the potato cakes finish cooking, fry the remaining egg to your liking.

Stack the potato cakes onto a serving plate and top with the fried egg.

Add any optional toppings and serve immediately.

Lad Tip: Leftover mash should never be thrown away. Keep it in the fridge for up to two days and it can become potato cakes, fishcakes, cottage pie topping or loaded potato croquettes, making one batch of mash stretch into several completely different Home Alone meals.
