Air-Fryer Leftover Roast Chicken Toastie preparation stage

You’ll Need

Main
2 slices thick white bread
100g cooked leftover roast chicken, shredded
20g mature cheddar, grated
1 small cooked stuffing ball, crumbled
1 tsp cranberry sauce
10g butter, softened

Optional but Dangerous
Thin slices of cooked bacon
Red onion chutney
Brie instead of cheddar
A small bowl of leftover gravy for dipping

Method

Preheat your air fryer to 190°C.

Butter one side of each slice of bread.

Turn the bread over and spread the cranberry sauce over one slice.

Top with the shredded roast chicken, crumbled stuffing and grated cheddar.

Close the sandwich with the second slice of bread, keeping the buttered side facing out.

Place the toastie into the air fryer basket.

Air fry for 4 minutes.

Carefully flip the toastie over and cook for another 3–4 minutes, until both sides are crisp and golden and the cheese has melted.

Leave to stand for 1 minute before slicing in half and serving.

Lad Tip: Whenever you cook a roast chicken, deliberately keep back one breast. It turns into toasties, fried rice, pasta, wraps and loaded potatoes later in the week, making one roast feel like two completely different meals.
