Air-Fryer Loaded BBQ Breakfast Hash Trays

This is what happens when breakfast wanders into a smokehouse and refuses to leave. Crispy potatoes. Smoky sausage. Bacon.

Air-Fryer Loaded BBQ Breakfast Hash Trays preparation stage

You’ll Need

600g potatoes, diced into small cubes
300g pork sausage meat
6 rashers streaky bacon, chopped
4 eggs
150g grated cheddar
1 tbsp olive oil

BBQ Breakfast Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper

To Finish
2 spring onions, sliced
2 tbsp BBQ sauce

Optional But Dangerous
Jalapeños
Crispy onions
Chipotle mayo
Black pudding

Method

Preheat your air fryer to 200°C.

Toss the diced potatoes with the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Place into the air fryer basket and cook for 10 minutes.

Break the sausage meat into small chunks and add to the potatoes.

Scatter over the chopped bacon.

Air fry for another 10–12 minutes, shaking halfway through, until the potatoes are crisp and the meat is browned.

Transfer everything into a foil tray or heatproof dish.

Make four small wells in the mixture.

Crack an egg into each well.

Scatter over the grated cheddar.

Return to the air fryer at 180°C for 5–7 minutes until the eggs are cooked to your liking and the cheese is melted.

Drizzle lightly with BBQ sauce.

Finish with spring onions, jalapeños, crispy onions, or chipotle mayo if using.

Serve immediately while still sizzling hot.

Lad Tip: Runny yolks mixed into smoky potatoes, sausage, bacon, and melted cheese create what can only be described as breakfast gravy. Don't waste a single drop of it.
