Method
Preheat your air fryer to 200°C.
In a bowl, mix together the plain flour, cornflour, smoked paprika, garlic powder, onion powder, salt, black pepper and dried thyme.
Dip each turkey piece into the beaten egg, then coat thoroughly in the seasoned flour mixture, pressing the coating on firmly.
Lightly spray the turkey with olive oil.
Arrange the pieces in a single layer in the air fryer basket.
Air fry for 12–15 minutes, shaking halfway through, until deeply golden, crisp and the turkey reaches an internal temperature of 75°C.
Meanwhile, whisk together the melted butter, cayenne, smoked paprika, brown sugar, garlic powder, chilli flakes and hot sauce.
Tip the cooked turkey bites into a large bowl and immediately pour over the Nashville hot butter.
Toss thoroughly until every piece is coated in the fiery glaze.
Finish with dill pickle slices, spring onions and a drizzle of ranch dressing.
Serve immediately with waffle fries, mashed potatoes or simply straight from the tray while they're still sizzling.
