Air-Fryer Nigerian Suya Beef Skewer Trays

The Grand Tour Story

The Grand Tour leaves the Cape behind and heads north into West Africa, where the evenings belong to the

roadside grills. As the sun drops below the horizon, charcoal fires begin glowing across the cities, music spills

onto the streets, and the unmistakable aroma of roasted peanuts, chilli and sizzling beef hangs in the warm

night air.

Welcome to Lagos.

Traffic barely moves, but nobody seems to mind. Every few hundred yards another suya stand appears, with

long skewers of beef grilling over hot coals while customers wait patiently with cold drinks in hand.

Our guide, Musa, smiles as he dusts another handful of spice over the meat.

"The fire cooks it."

"The spice tells the story."

One skewer later, we were already ordering another.

Air-Fryer Nigerian Suya Beef Skewer Trays preparation stage

You’ll Need

For the Beef
700g sirloin, rump or frying steak, cut into long strips
2 tbsp vegetable oil

Suya Spice Mix
3 tbsp roasted peanut powder (or finely ground peanuts)
2 tsp smoked paprika, 1 tsp cayenne pepper
1 tsp chilli powder, 1 tsp garlic powder
1 tsp onion powder, 1 tsp ground ginger
1 tsp ground cumin, 1 tsp sea salt, ½ tsp cracked black pepper

To Serve
1 red onion, finely sliced
1 tomato, sliced
Fresh cucumber slices
Lime wedges

Optional but dangerous
Extra suya spice

Chilli sauce
Warm flatbreads
Cold Nigerian lager

Method

Preheat your air fryer to 200°C.

In a large bowl, combine the peanut powder, smoked paprika, cayenne, chilli powder, garlic powder, onion

powder, ginger, cumin, sea salt and black pepper.

Toss the beef strips with the vegetable oil until lightly coated.

Coat the beef thoroughly in the suya spice mixture, pressing the seasoning firmly onto the meat.

Thread the beef onto metal or soaked wooden skewers.

Arrange the skewers in the air fryer basket in a single layer.

Air fry for 8–10 minutes, turning halfway through, until beautifully browned with lightly charred edges while still

juicy inside.

During the final minute, lightly dust with a little extra suya spice.

Serve immediately with sliced onion, tomato, cucumber and fresh lime wedges.

Add chilli sauce or warm flatbreads if using.

Lad Tip: Musa says the spice should cling to the beef, not fall off onto the plate. Press it on firmly before cooking, don't be afraid of a little charring around the edges, and always serve plenty of fresh onion alongside. That sharp crunch is what makes a proper Lagos suya stand taste like home.
