You’ll Need

1 sheet ready-rolled puff pastry
1 tsp vanilla extract
180g thick vanilla custard
1 egg, beaten
6 tinned peach slices, well drained
1 tbsp demerara sugar
To Finish
Apricot jam, warmed
Icing sugar
Optional But Dangerous
White chocolate drizzle
Vanilla ice cream

Method

Preheat the air fryer to 180°C.

Cut the pastry into six squares and score a 1cm border around each without cutting through.

Fold two opposite corners towards the centre to create a loose crown shape.

Mix the custard with vanilla and spoon it into the centres.

Top each with a very well-drained peach slice.

Brush the pastry with egg and sprinkle the edges with demerara sugar.

Air fry for 9-11 minutes until risen, crisp and golden.

Brush the peaches with warm apricot jam and dust lightly with icing sugar.

Lad Tip: Drain the peaches like you mean it. Syrup on raw pastry is how a crown becomes a damp hat.
