You’ll Need

4 pineapple rings, drained
100g caster sugar
4 glacé cherries
2 eggs
40g light brown sugar
100g self-raising flour
20g melted butter
1 tsp vanilla extract
100g softened butter
2 tbsp pineapple juice
To Finish
Warm caramel sauce
Toasted coconut
Optional But Dangerous
Vanilla ice cream
Double cream

Method

Preheat the air fryer to 160°C and grease four wide ramekins.

Mix the brown sugar with the melted butter and divide between the ramekins.

Trim the pineapple rings to fit, then place one in each pot with a cherry in the centre.

Beat the softened butter and caster sugar until creamy, then beat in the eggs one at a time.

Fold in the flour, vanilla and pineapple juice.

Spoon the batter over the fruit and level the tops.

Air fry at 160°C for 15-17 minutes until risen and a skewer comes out clean.

Rest for 5 minutes, run a knife round each edge and turn out onto plates.

Lad Tip: Five minutes of resting is not cowardice; it is structural engineering. Flip too soon and the pineapple may keep the cake as a hostage.
