Air-Fryer Pitmaster Chicken Wing Platters

Every proper barbecue needs wings. Not salad. Not decorative vegetables pretending to contribute. Wings. Crispy skin. Smoky seasoning.

Air-Fryer Pitmaster Chicken Wing Platters preparation stage

You’ll Need

1kg chicken wings
1 tbsp olive oil

Pitmaster Rub
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp brown sugar
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes

Sticky BBQ Glaze
4 tbsp smoky BBQ sauce
1 tbsp honey
1 tsp Worcestershire sauce
1 tsp apple cider vinegar

Optional But Dangerous
Blue cheese dip
Spring onions
Jalapeños
Loaded fries

Method

Preheat your air fryer to 200°C.

Pat the wings completely dry with kitchen paper.

Add the wings to a large bowl.

Drizzle over the olive oil.

Mix together all the pitmaster rub ingredients and coat the wings thoroughly.

Place the wings into the air fryer basket in a single layer.

Air fry for 22–25 minutes, turning halfway through, until deeply golden and crisp.

While the wings cook, combine the BBQ sauce, honey, Worcestershire sauce, and apple cider vinegar.

During the final 4 minutes of cooking, brush the wings generously with the glaze.

Return to the fryer and allow the glaze to caramelise around the skin.

Remove and rest for 1 minute.

Pile high onto a platter and serve immediately.

Lad Tip: The secret isn't more sauce. It's crisp skin underneath the sauce. Get the wings crispy first, then glaze late. That's the difference between proper BBQ wings and a sticky disappointment.
