1 tsp wholegrain mustard
1 tsp runny honey
½ tsp dried thyme

Grated mature cheddar over the potatoes
Method
Preheat your air fryer to 200°C.
Toss the baby potatoes with the olive oil, thyme, salt and black pepper.
Place them into a foil tray or heatproof dish and cook for 10 minutes, stirring halfway through.
Mix the wholegrain mustard and honey together.
Brush the pork chop generously with the honey mustard glaze.
Add the pork chop, apple wedges and red onion to the tray alongside the potatoes.
Brush the remaining glaze over the apples and onions.
Return the tray to the air fryer and cook for 12–14 minutes, turning the pork halfway through, until the pork is cooked through, the potatoes are crisp and the apples are lightly caramelised.
Allow the pork to rest for 2 minutes before serving.
Spoon the roasted apples and onions over the pork and serve immediately.
