8 slices prosciutto
1 tbsp extra virgin olive oil
30g Parmesan, shaved
Zest of ½ lemon
Freshly cracked black pepper

Lemon wedges
Rocket leaves
Balsamic glaze (optional)

Method
Preheat your air fryer to 190°C.
Toss the asparagus lightly with the olive oil and a little black pepper.
Cut each slice of prosciutto in half lengthways.
Wrap one strip of prosciutto around two asparagus spears, spiralling from the bottom towards the tip.
Repeat until all the asparagus is wrapped.
Arrange the bundles in a single layer in the air fryer basket, leaving a little space between each one.
Air fry at 190°C for 7–9 minutes, turning once halfway through, until the prosciutto is crisp and the asparagus is just tender.
Transfer to a serving plate immediately.
Scatter over the shaved Parmesan and fresh lemon zest while everything is still hot.
Finish with a squeeze of fresh lemon and, if using, a light drizzle of balsamic glaze or a few toasted pine nuts.
