Air-Fryer Puerto Rican Chicharrón Chicken Bites with Mojo Mayo

Easy air-fryer puerto rican chicharrón chicken bites with mojo mayo with measured UK ingredients, practical timings and proper global chicken flavour.

Chicharrón de pollo is all about small pieces of chicken with a hard, craggy crust and plenty of garlic, oregano and citrus. It is fried-chicken energy without needing a pan of oil.

Cornflour and a touch of baking powder give the air-fryer coating its crunch. A sharp mojo mayonnaise brings garlic and lime back to the plate and makes these bites vanish at an irresponsible speed.

Air-Fryer Puerto Rican Chicharrón Chicken Bites with Mojo Mayo preparation stage

You’ll Need

For the Chicken Bites
650g chicken thigh fillets, cut into 3cm pieces
Juice of 1 lime
2 garlic cloves, finely grated
1 tsp dried oregano
1 tsp smoked paprika
½ tsp sea salt
½ tsp black pepper
70g cornflour
½ tsp baking powder
Olive oil spray

For the Mojo Mayo
150g mayonnaise
1 garlic clove, finely grated
Juice of ½ lime
1 tbsp orange juice
½ tsp dried oregano

To Finish
Chopped coriander
Lime wedges

Optional but Dangerous
Hot sauce
Crispy plantain
Extra mojo mayo

Method

Mix the chicken with lime juice, garlic, oregano, paprika, salt and black pepper.

Marinate in the fridge for 20 minutes, then drain and pat the pieces lightly dry.

Preheat your air fryer to 200°C.

Mix the cornflour and baking powder in a bowl.

Toss the chicken through the coating, shake off the excess and spray generously with oil.

Arrange in a single layer and air fry for 7 minutes.

Shake well, spray any dry white patches and cook for another 6-8 minutes.

Check the largest piece reaches 75°C and the coating is crisp.

Mix all the mojo mayonnaise ingredients until smooth.

Finish the chicken with coriander and lime and serve with the mojo mayo.

Lad Tip: Drain the citrus marinade and keep the cornflour coating thin. Too much wet paste creates armour on the outside and steam underneath, a dusty coat turns properly crisp.
