You’ll Need

90g butter, melted
80g plain flour
120g caster sugar
20g cocoa powder
2 eggs
150g full-fat cream cheese
1 tsp vanilla extract
35g icing sugar
1 tsp red gel food colouring
1 egg yolk
To Finish
White chocolate curls
Crushed chocolate biscuits
Optional But Dangerous
Vanilla ice cream
Warm chocolate sauce

Method

Preheat the air fryer to 155°C and line a 15cm square tin.

Whisk the melted butter, caster sugar, whole eggs, vanilla and red colouring until glossy.

Fold in the flour and cocoa.

Reserve three tablespoons of batter, then spread the rest into the tin.

Beat the cream cheese, icing sugar and egg yolk until smooth.

Spoon over the brownie, dot with the reserved batter and swirl with a knife.

Air fry at 155°C for 17-20 minutes until set at the edges with a slight centre wobble.

Cool fully before slicing and finishing.

Lad Tip: Use gel colouring. Liquid colouring weakens the batter and leaves you with pinkish regret instead of proper red velvet.
